Birthday Dinner for Husband: Pot Roast (Pioneer Woman Recipe)

For my husband’s birthday dinner, he requested pot roast, and the weather has been perfectly chilly for a hearty meal. It was my first time making pot roast, so I turned to the Pioneer Woman for her recipe, and it got husband’s stamp of approval!

Working away in the kitchen! The pot roast only takes prep time: caramelizing onions and carrots, and marinating and searing the roast. Once the sucker is in the oven, you have 3-5 hours just to do whateverrr.

Finished pot roast! This roast has been in the oven for 4 hours, and everything has browned beautifully.

By this point, the chuck meat is so tender, you can pull it apart with a fork.

 Pot roast with its carrot and caramelized onion stew, and a side of crispy rosemary fingerling potatoes.

Ice cream sandwiches from Cupcake Royale as birthday cakes: red velvet and pumpkin cardamom. Happy birthday, love!

    Woah that looks delicious. My bf and I always talk about making pot roast in our slow cooker but the last time I tried to make roast beef it didn't turn out so well. Maybe I'm buying the wrong cuts of meat. Happy birthday to your hubby!

    Go girl! I am seriously impressed. Cooking meat intimidates me, but that pot roast looks delicious. And so do those ice cream sandwiches. I didn't know cupcake royal sold ice cream sandwiches. Clearly I need to make another trip there ASAP!
